Justin Shimek, Ph.D. is CEO at Mattson, an employee-owned innovation company with the mission: “We Invent the Future of Food, One Product at a Time." Mattson’s diverse community of strategists, marketers, insights professionals, food scientists, and commercialization specialists has conceptualized and launched thousands of products in almost 50 years of working with the world’s largest food companies to the smallest mission-driven startups. Justin earned a Ph.D. in food science from the University of California, Davis and Bachelor of Science degrees in both food science and nutrition at the University of Minnesota. As a long-time member of the Institute of Food Technologists (IFT) he has served in many volunteer roles including on its Board of Directors and is an IFT Fellow.
