Matt Amicucci, PhD, is a carbohydrate chemist and co-founder of one.bio, where he leads the discovery, process development, and clinical validation of next-generation dietary fibers. His path started in professional kitchens before turning to science full-time: a BSc in Food Science and Technology and a PhD in Agricultural Chemistry from UC Davis, where his research into the structural relationship between carbohydrates and the gut microbiome became the foundation for one.bio's platform.
That research led to one.bio 01, a highly soluble, short-chain oat fiber that disappears into food and drink with no taste or texture penalty, backed by clinical data showing improved glucose metabolism and gut health. one.bio has since built the largest fiber structure-function database, mapping how each fiber's structure modulates health through the microbiome, with a pipeline that includes short-chain pea, barley, and citrus fibers.

Matt believes the path to closing the fiber gap is returning fiber to the foods people already enjoy, rather than asking people to change how they eat. He writes and speaks widely on fiber's role in metabolic and gut health, and on translating that science into what actually reaches consumers' plates.
