Lee Cadesky is a food scientist, strategist, marketer, and author. She is currently Innovation Director at Maple Leaf Foods, where she helps shape strategy and innovation focused on protein innovation in Canadian retail and foodservice. Before her work at Maple Leaf, she was an entrepreneur in the insect protein sector, where she patented and commercialized novel insect-based ingredients across Canada, the United States, and Europe. She is the author of Grub: Why We Eat, Why it Matters, and the Seven Forces that Shape Our Food a book that traces the science, history, and future of the modern food industry. Lee holds an M.S. in food science from Cornell University and a B. Eng from McGill in mechanical engineering.
