Udi Lazimy is the Founder and CEO of FUDI Protein, a food technology company developing high-quality RuBisCO protein from plant leaves. FUDI’s mission is to unlock one of the world’s most abundant proteins as a scalable, functional, and sustainable ingredient for the global food industry. 

Udi brings deep experience across food innovation, sustainability, supply chain, and commercialization. Previously, he served as Global Head of Sustainability, Supply Chain, and Sourcing at Eat Just, where he helped scale JUST Egg, built global ingredient and sourcing networks, and led strategic partnerships across R&D, manufacturing, and supply. 

His background spans food policy, sustainable business, agricultural systems, and ingredient commercialization. He holds both an MPA focused on food policy and an MBA in sustainable business. 

At FUDI Protein, Udi is focused on building the next generation of protein ingredients by combining strong functionality, competitive economics, and regenerative agricultural sourcing.
