DAY 1 COURSE: October 21, 2025

Take a deep dive into technical innovations in alternative proteins and plant-based food & drink sectors. Gain practical, science-driven insights into ingredient functionality formulation strategies, and next-generation product development, led by the Bezos Center for Sustainable Protein at North Carolina State University. In the afternoon, join immersive workshops at SunOpta’s headquarters in Eden Prairie, followed by a welcome networking reception.

DAY 2 & 3 SUMMIT: October 22-23, 2025

The two-day Summit will address the most critical challenges facing the alternative proteins and plant-based sectors. With insights into the industry's economic challenges and opportunities, you'll learn about plant-based alternatives, precision fermentation, cultivated technologies, affordability, taste & texture, and nutritional value in sustainable food products and experience incomparable networking opportunities.

Based in the Minneapolis-St. Paul region, and part of the GREATER MSP Partnership, MBOLD takes a collaborative approach to accelerating practical solutions to climate change and growing demand for food. Through their coalition of leading global players, MBOLD is building a   hub for innovation in protein sustainability rooted in the American heartland.
